Salad
1Combine chicken pieces with water chestnuts, grapes and half of the toasted almonds.
Dressing
1Mix remaining ingredients for the dressing.
Assembly
1Combine the two mixtures. Chill.
2Serve on lettuce leaves with almonds sprinkled on top.
Rotisserie Chicken makes it easier and is tasty.
1 quart cooked chicken, in small pieces
1 can water chestnuts, sliced
1 pound green seedless grapes, halved
1/3 cup celery, sliced
1/3 cup almonds, toasted
1 1/2 cups mayonnaise
1 tablespoon curry powder
1 tablespoon soy sauce
1 tablespoon lemon juice
