Wild Mushroom Dressing

A different dressing for Thanksgiving.

Directions

1Melt 1/2 cup butter in heavy large skillet over medium high heat until light brown. Add mushrooms and saute until lightly colored, about 4 minutes. Stir in green onions, salt and pepper and cook 1 minute. Strain mixture into large bowl, discarding liquid.

2Melt 2 cups butter in same skillet over medium heat. Add bread crumbs and cornmeal and sir until mixture begins to color, about 10 minutes. Reduce heat to medium-low and continue stirring until mixture is crisp and golden brown, about 12 minutes or longer.

3Add breadcrumb mixture to mushrooms. Stir in parsley. Serve warm.

A combination of mushrooms works well: some white, crimini, portabella.

Can be made earlier in the day and reheated. Allow about 30 minutes to reheat.

6 cups mushrooms, diced

3/4 cup green onions, thinly sliced

salt & pepper

2 cups unsalted butter

4 1/2 cups fresh bread crumbs

1 1/2 cups whole-grain cornmeal

1/3 cup fresh parsley, minced
