Veal Scallopini

Directions

1Pound veal thoroughly and cut in serving pieces.

2Beat egg well with 1 teaspoon spaghetti sauce seasoning and salt.

3Combine Parmesan cheese and crumbs.

4Dip veal in egg and then in bread crumbs.

5Place on wax paper and let stand 20 minutes.

6Brown quickly in heavy frying pan in hot oil.

7Remove and keep warm.

8Add wine, tomato sauce, mushrooms and remaining seasoning to frying pan. Simmer for 5 to 10 minutes.

9Pour on veal.

All can be made ahead and reheated.

1 pound thinly sliced veal scallops

1 egg

3 teaspoons spaghetti sauce seasoning

1/2 teaspoon salt

1/4 cup Parmesan cheese, grated

1/4 cup dry french bread crumbs

1/4 cup olive oil

1/2 cup dry white wine

1 8 ounce can tomato sauce

8 ounces mushrooms, sliced
