Spaghetti Carbonara

Directions

1Cut bacon in one inch pieces. Cook until crisp. Reserve half the grease.

2Add the cream to the reserved grease and keep warm.

3In a small bowl cream butter by beating it against the sides with a wooden spoon until soft & fluffy.

4In another small bowl, beat eggs and egg yolks with whisk until well blended. Stir in 1/2 cup of grated cheese. Set both bowls aside.

5Heat a large ovenproof casserole dish in a 200 degree oven.

6Cook spaghetti and drain well. Transfer to heated casserole dish.

7Stir in butter, tossing to coat evenly.

8Then stir in bacon cream mixture and finally eggs and cheese.

9After all is well combined stir in the bacon pieces.

10Serve at once. Pass the remaining cheese at the table.

4 tablespoons butter, soft

2 whole eggs

2 egg yolks

1 cup Parmesan cheese, freshly grated

1 pound spaghetti, cooked

1 pound bacon

1/2 cup heavy cream
