1Heat oil in large saucepan over medium-high heat.
2Add chicken and onions; cook 4-5 minutes.
3Stir in broth, green chilies and spices. Simmer 15 minutes.
4Stir in beans. Simmer 5 minutes.
5Top with onions. Garnish with Jack cheese.
1 tablespoon olive oil
1 1/2 pounds boned and skinned chicken breasts, cubed
1/4 cup onion, chopped
1 cup chicken broth
2 cans chopped green chilies
2 cans white beans
2 green onions, sliced
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon oregano leaves
1/2 teaspoon cilantro leaves
1/4 teaspoon red pepper
