Rye Bread

This is a rich dense bread; great for sandwiches.

  • Prep: 1 hrs 30 mins
  • Cook: 50 mins
  • Yields: 2 loaves

Directions

1Dissolve the yeast in warm water and 1 tablespoon of sugar. Let stand 10 minutes.

2Add rest of ingredients except flours.

3Sift rye flour into mixture and let stand 10-15 minutes.

4Knead in 6 to 7 cups of white flour.

5Knead at least 10 minutes or until dough is smooth and not sticky.

6Let rise until double. Shape into loaves.

7Bake in a 325 degree oven for 50 minutes.

The bread does not need to rise a second time before baking

Ingredients

2 cups warm water

3/4 cup brown sugar

1 tablespoon anise seed

1 1/2 tablespoons salt

1/2 cup sorghum molasses

1 can carnation milk & water to make 2 cups

2 packages dry yeast in 1/2 cup warm water, 1 T sugar

1 stick margarine

2 tablespoons grated orange rind

4 1/2 cups rye flour

6 cups white flour
