Quinoa Energy Salad

Directions

1Cook the quinoa according to package directions. Cool to room temperature.

2Combine the quinoa, beans, mango, pepper, onions and cilantro in a large bowl and toss.

3In a small bowl, whisk the oil, lime juice and vinegar.

4Toss into salad and refrigerate overnight.

Ingredients

3 cups cooked quinoa

1 14 oz. can black beans (rinsed, drained)

1 large mango (peeled, diced)

1 red bell pepper (diced)

1/2 cup green onions (sliced)

2 T cilantro (chopped)

2 T olive oil

2 T lime juice

2 T red wine vinegar

salt and pepper
