Pork Tenderloin Balsamico

Directions

1Preheat oven to 450 degrees.

2Combine garlic, rosemary, lemon peel and salt and pepper. Press mixture into tenderloins.

3In large skillet with oven proof handle, heat oil over medium heat. Add tenderloins and cook, turning frequently until browned - about 10 minutes.

4Place skillet with tenderloins in oven. Roast 10 minutes. Remove pork from pan and keep warm.

5Set pan over high heat and stir in broth and vinegar, scraping up brown bits. Bring to boil and reduce by half. Whisk in butter, 1 tablespoon at a time. Stir in capers.

6Cut tenderloins into thick slices and serve with sauce.

4 cloves of garlic, minced

2 tbsp fresh rosemary, chopped

1 tbsp grated lemon peel

2 tsp each salt and pepper

2 pork tenderloins, about 1 1/2- 2 lbs. each

2 tbsp olive oil

1/2 cup beef broth

1/2 cup balsamic vinegar

2 tbsp butter

2 tbsp capers
