Pasta di Salmon

Directions

1Melt butter in a large saute pan.

2Add garlic, Old Bay, fennel, pepper and a squeeze of lemon juice.

3Add salmon and tomatoes to pan. Saute for about 45 seconds.

4Add cream and cheese; reduce by half, stirring constantly.

5Add vegetables and continue to cook for two minutes. Be sure not to overcook. Add 2 ounces of vodka. Do not flambe.

6Salt to taste, toss with pasta and serve.

Ingredients

2 oz butter

1 teaspoon garlic

1/8 teaspoon whole fennel seed

Kosher salt and black pepper

1/2 ` lemon

1 teaspoon Old Bay seasoning

1 pound salmon, cut in bite size pieces

1/4 cup Gorgonzola cheese

1/2 cup heavy cream

1/4 cup bell peppers, green, yellow, red, thinly sliced

3/4 cup shiitake and button mushrooms, sliced

3 Roma tomato, skinned and diced

9 ounces pasta, cooked
