Party Sausage Bites with Pine Nuts

Directions

1In a skillet, melt butter over medium heat and saute garlic and shallots for 5-6 minutes until fragrant and translucent. Let cool.

2Mix sausage, shallot and garlic, herbs, salt and pine nuts in a bowl until smooth.

3Roll out pastry on a lightly floured surface. Cut into 4 three inch wide strips that are about 12 inches long.

4Arrange sausage stuffing in a 1" roll in the middle of the length of the strip, taking care to reach all the way to each end.

5Sprinkle portion of the Parmesan cheese on top of the sausage stuffing.

6Spread some egg wash along one of the long edges. Carefully fold the dough over the sausage stuffing, closing the seam.

7Roll the sausage filled dough pipe on the board a little bit to ensure uniform thickness and to seal the seam. Repeat with the rest of the dough and stuffing.

8When all pipes are ready, spread the egg wash all over them and sprinkle with the seeds. Cut each pipe into twelve 1" bites and arrange on a baking sheet about 1" apart.

9Bake in a 425 degree oven for 20 minutes or until golden and crisp. Serve warm.

They can be prepared ahead up to the point of cutting into bites and frozen.  Remove from the freezer 1 hour prior to baking

Ingredients

2 tbsp butter

3 shallots, minced

2 cloves of garlic, minced

14 oz. mild or hot Italian sausage

1 tsp dry thyme

1 tsp dry basil

1/2 tsp salt

1/4 cup pine nuts

1/3 cup Parmesan cheese

1 sheet frozen puff pastry, thawed according to instructions

1 egg, whisked with a small pinch of salt and 1 tbsp. water

4 tbsp sesame, caraway, fennel, dill or other seeds for sprinkling
