Mock Enchilada Casserole

Directions

1Brown meat; add onion and cook until golden. Season with salt & pepper if desired.

2Add chili con carne and beans.

3Place layer of corn chips in greased 1 ½ qt. baking dish.

4Alternate layers of chili con carne mixture, corn chips and cheese.

5Bake in moderate oven (350 degrees) about 10 minutes until cheese is melted.

Ingredients

1 pound ground beef

1/3 cup onion, chopped

1 can chili con carne without beans

1 can pinto beans, drained

1 package Fritos

Longhorn cheese, shredded
