Memphis Dry Rub Ribs

Directions

1Preheat grill to 300 degrees.

2In a small bowl combine all the dry rub ingredients. Mix well

3In a small mixing bowl, whisk together the pineapple juice and apple cider vinegar to make the glaze. Set aside

4Place the ribs flat on a sheet pan or cutting board. Sprinkle liberally with the dry rub mixture and fully saturate both sides. Pat roughly to ensure entire rib is covered.

5Place ribs with the meatier side down on the grill. Cover and cook for about an hour. After the first 20 minutes, brush both sides of ribs with the glaze. Repeat again at 40 minute, and again just before removing ribs from the grill.

6Preheat oven to 325 degrees. To finish cooking and impart more flavor to the ribs, place them into a roasting pan. Pour any remaining glaze over the ribs, and roast for 20 minutes uncovered, or until internal temp of 200 degrees.

7Remove ribs from the oven and transfer to a cutting board. Allow the ribs to rest for 10 minutes and then cut ribs in between bones to serve.

2 tbsp paprika

1 tbsp brown sugar

1 tbsp kosher salt

1 tsp allspice

11 tsp cayenne pepper

2 tsp seasoning salt

2 tsp black pepper

1 tsp garlic powder

2 tsp onion powder

1/2 tsp cumin

Ribs

1 cup pineapple juice

3 tbsp apple cider vinegar

4 lbs baby back ribs
