Directions

1Carmelize onions, shallots and garlic in the olive oil.

2Add wine and reduce.

3Add the vinegar and reduce.

4Slowly add the tomatoes and tomato sauce.

5Add herbs and salt and pepper.

6Simmer for an hour.

7Add the Worcestershire sauce and Tabasco sauce and simmer for an additional 30 minutes.

8Cool overnight.

9To serve, blend all ingredients and reheat.

6 large shallot, chopped

8 heads garlic

2 tablespoons olive oil

1/2 bottle red wine

24 ounces balsamic vinegar

96 ounces canned tomatoes

96 ounces tomato sauce

2 tablespoons basil

2 tablespoons thyme

2 tablespoons rosemary

1 tablespoon oregano

pepper

1 tablespoon Worcestershire sauce

1 tablespoon Tabasco sauce
