Fried Rice

A quick dinner option

  • Yields: 4 servings as a main course

Directions

1Heat 1/2 tablespoon of butter in a large saute pan or wok. Scramble egg. Remove and transfer to a bowl.

2Add additional tablespoon of butter to pan and melt. Add carrots, onion, peas and garlic. Season with a generous pinch of salt and pepper. Saute for abot 5 minutes until the onion and carrots are soft. Increase heat to high, add the remaining butter and stir until melted. Immediately add the rice, green onions, soy sauce and oyster sauce. Stir until combined. Continue sauteing for an additional 3 minutes to fry the rice, stirring occasionally.

3Remove from heat and stir in the eggs. Stir in the sesame oil. Taste and season with additional sesame oil.

It is critical to use COLD rice.

I use froze chopped carrots and peas.

I add a protein like rotisserie chicken, shrimp or pork tenderloin.  If adding raw meat, saute in wok after scrambling the egg.

3 tbsp butter

2 eggs

2 carrots, peeled and diced

1 small white onion, diced

1/2 cup frozen peas

3 cloves of garlic

salt and pepper

4 cups cooked and chilled rice

3 green onions, thinly sliced

4 tbsp soy sauce

2 tsp oyster sauce

1/2 tsp toasted sesame oil
