Cheese Soda Bread

Directions

1Preheat oven to 350 degrees.

2Mix flour, baking powder, salt and baking soda in a large bowl. Cut in butter until mixture resembles coarse meal. Stir in grated cheese.

3Beat eggs to blend in medium bowl; reserve 1 tablespoon for glazing bread.

4Blend buttermilk into beaten eggs.

5Stir into flour mixture; dough will be sticky.

6Turn out onto lightly floured surface and knead until blended, 2 to 3 minutes. Shape into round and fit into a greased 1 1/2 quart, 3-inch deep round baking dish.

7Cut 1/4 inch deep cross in center of dough. Brush with reserved egg.

8Bake until tester inserted in center of bread comes out clean, about 75 minutes.

9Cool in pan on rack 15 minutes. Invert onto rack and continue cooling.
