Cheddar and chive rounds

Directions

1Stir together the cheese, mayonnaise, onion and salt and pepper to taste.

2Spread a thin layer of butter on each bread round. Top with about a tablespoon of cheese mixture.

3When ready to serve, sprinkle chives on top

Cheese mixture can be made 2-3 days ahead then assemble 6-8 hours ahead.   Chill after assembly.

Ingredients

6 oz. extra-sharp cheddar cheese, finely grated ( 1/2 cups)

1/2 cup mayonnaise

6 tbsp sweet onion, finely chopped or grated

32 white bread cut in 2" circles

butter

chives, thinly sliced
