A refreshing dessert after a rich meal

  • Yields: 4 Servings

Directions

1Bring the milk, sugar and vanilla bean to a boil. Cool and remove bean. (Save bean for another day)

2Blend cooled coffee, milk mixture and cream. Freeze.

3To serve, partly thaw until consistency allows pouring into parfait glasses.

4Fill glasses 2/3 full. Top with whipped cream.

Serve with a shortbread or butter cookie.

12 ounces strong coffee, cooled

12 ounces milk

1 cup sugar

1 vanilla bean

5 ounces cream
