Buttermilk Biscuits

Directions

1Sift flour and sugar into large bowl. Add the butter that has been cut into 1/2 inch pieces. Rub with finger tips until coarse crumbs form. (Or whirl in food processor).

2Add buttermilk and stir until dough forms (will be very moist).

3Turn dough out onto generously floured surface and knead gently, about 6 to 8 turns.

4Roll out to 3/4 inch thickness. Using a 2 1/2 inch floured biscuit cutter, cut out rounds. Reroll dough scraps and cut out additional biscuits.

5Place on ungreased baking sheets and bake in a 375 oven until light golden, about 28 minutes.

6Serve warm with butter and honey.

1/4 cup sugar

1 cup unsalted butter, chilled

1 1/2 cups buttermilk
