Whipped Shortbread

Melt in your mouth cookies.

Directions

1Cream butter and sugar until light and fluffy, about 5 minutes. Add vanilla. Gradually add flour and cornstarch, beating until well blended.

2With hands lightly dusted with additional cornstarch, roll dough into 1" balls. Place 1' apart on ungreased baking sheets. Press lightly with a floured fork. Sprinkle with plain or colored sugar.

3Bake at 300 degrees until bottoms are lightly browned, 20 minutes. Cool for 5 minutes before removing from pans to wire racks.

3/4 cup powdered sugar

3/4 cup cornstarch

2 1/4 cups flour

1 tsp vanilla
