Tomatoes Florentine

A colorful accompaniment to roast beef.

Directions

1Place tomatoes in a lightly greased 9 x 9 inch glass baking dish.

2Combine spinach with bread crumbs, green onions, eggs, melted butter, Parmesan cheese, crumbled bacon, salt and pepper.

3Spoon spinach mixture over top of each tomato slice.

4Bake at 350 degrees for 15 minutes or until lightly browned.

Ingredients

8 thick tomato slices

1 10 ounce pkg frozen chopped spinach, cooked and drained

1/2 cup soft bread crumbs

1/2 cup seasoned bread crumbs

1/2 cup green onions, finely chopped

3 eggs, slightly beaten

6 tablespoons butter, melted

1/3 cup Parmesan cheese

4 strips bacon, cooked, crumbled

salt and pepper
