Tomato Basil Soup

  • Yields: 6-8 Cups

Directions

1Cut tomatoes in half and roast in a 350 degree oven until juicy. Remove skins.

2Saute onions in medium sauce pan in a little oil until soft.

3Add roasted tomatoes and the rest of the ingredients.

4Simmer until the flavors are blended (30-45 minutes).

5Puree in blender or food processor - 2 cups at a time. If you like more texture just puree half.

6Season with salt and pepper.

3 pounds Roma tomatoes

1 16 ounce can crushed tomatoes

2 cups chicken broth

2 cups fresh basil

1 small onion, chopped
