Smoked Salmon and Cucumber Squares

Directions

1Halve cucumber crosswise and thinly julienne lengthwise with a mandoline. Discard core.

2Stir together sour cream and horseradish.

3Cut bread into 2" circles with a cookie cutter. Do not use crusts.

4Spoon 1/2 teaspoon of sour cream mixture onto square, top with the piece of salmon. Top salmon with a small portion of cucumber, twirled into a mound.

Cucumber can be julienned 2-4 hours in advanced and chilled.

Bread can be assembled, except the cucumber 6 hours in advance and chilled.  Top with cucumber when ready to serve.

1 English cucumber, peeled

6 tbsp sour cream

1 1/2 tbsp bottled horseradish

pumpernickel bread

1/4 lb thinly sliced smoked salmon, cut in 1 1/2 inch pieces
