1Heat oil in a large saucepan over medium heat. Add onion and cook 5-7 minutes, until it is golden brown and caramelized. Stir often.
2Add sausage and cook 3 minutes, until browned, breaking up sausage as it cooks.
3Add rice and cook 3 minutes, stirring frequently, until it becomes translucent.
4Add 1/2 cup of broth and stir until it is absorbed. Continue adding broth 1/2 cup at a time, each time the previous 1/2 cup is absorbed, stirring frequently. The process should take 15-20 minutes.
5Add cheese and cook until it melts, stirring constantly and adding more broth if necessary.
6Season with salt and pepper.
