Peach Pie

Directions

1Line pie pan with bottom crust and chill.

2Toss sliced peaches with lemon juice.

3In a small bowl combine tapioca, nutmeg and 2/3 cup of sugar.

4Add to peaches.

5Brush chilled crust with some of egg white.

6Spoon the peach mixture into pie crust and dot with butter.

7Cover with top crust and brush with rest of egg white and sprinkle with remaining sugar.

8Bake one hour at 350 degrees.

8 cups ripe peaches, skinned and sliced

1 tablespoon lemon juice

1/4 cup instant tapioca

1/2 teaspoon nutmeg

2/3 cup sugar

1 egg white

1 tablespoon unsalted butter, cut into small piece

1 tablespoon sugar
