Pastel de Tres Leches (Three Milks Cake)

Directions

Cake

1Beat egg whites until peaks form.

2Gradually add sugar.

3Add yolks; beat 3 minutes.

4Combine flour and baking powder; alternately add egg mixture with milk.

5Pour into well-greased 9"x13" baking pan and bake 30-40 minutes at 350.

Sauce

1Pour sauce ingredients into blender; blend.

2Punch holes in cake with toothpick while still warm; pour sauce over cake.

3Allow cake to cool in refrigerator before frosting.

Frosting

1In the top of a double boiler, mix all ingredients.

2Cook 7-10 minutes while beating constantly.

3Frost cake. Keep refrigerated.

Cake

6 large eggs, separated

3/4 cup granulated sugar

2 cups all purpose flour

3 tsp (1 Tbsp) baking powder

1/2 cup milk

2 tsp pure vanilla extract

Sauce

1 can (14 oz.) evaporated milk

1 can (14 oz.) sweetened condensed milk

1 can (225 grams) Crema Media (light cream) - Can be found in Mexican food stores. If unable to find, the same amount of heavy whipping cream may be substituted.

Frosting

2 large egg whites

Dash of salt

2 Tbsp white corn syrup (Karo)

1/2 cup granulated sugar

1/3 cup water

2 tsp pure vanilla extract
