Orange Glazed Carrot Ribbons

An excellent side dish to serve with pork.

  • Yields: 8 Servings

Directions

1Run vegetable peeler down length of carrots, shaving off long ribbons (8 cups).

2Cook in large saucepan of boiling water for about 2 minutes.

3Drain and gently pat dry. (Can be made ahead and covered and chilled.)

4Stir orange juice and sugar in a large heavy skillet over medium-high heat until sugar dissolves.

5Boil until reduced to 1 cup, about 5 minutes.

6Add carrots and butter; simmer until carrots absorb most of syrup.

7Add honey and vinegar. Mix gently.

8Season with salt and pepper.

2 pounds large long carrots, peeled

2 cups orange juice

1 1/2 teaspoons dark brown sugar

2 tablespoons butter

2 teaspoons honey

1/4 teaspoon balsamic vinegar
