(Can be made ahead and covered and chilled.) 4Stir orange juice and sugar in a large heavy skillet over medium-high heat until sugar dissolves. 5Boil until reduced to 1 cup, about 5 minutes. 6Add carrots and butter; simmer until carrots absorb most of syrup. 7Add honey and vinegar. Mix gently. 8Season with salt and pepper.
