An excellent side for beef roast.

Directions

1Combine all ingredients and cook, uncovered, in a very large skillet over medium heat until tender, about 10 minutes. Sprinkle with coarse sea salt and cracked pepper.

6 cups assorted mushrooms, halved, stems remove

3 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon reduced sodium soy sauce
