Marinated Tuna Steaks with Tomato-Basil Sauce

Directions

Fish

1Sprinkle tuna steaks on both sides with pepper.

2Combine oil, lemon juice, and chopped oregano in shallow glass dish just large enough to hold tuna steaks in a single layer and stir to blend.

3Add tuna steaks, turning to coat both sides with marinade.

4Set aside at room temperature and let marinate for 1 hour, turning once or twice.

Sauce

1Meanwhile, in a medium skillet melt butter with oil over medium heat, add shallot, and cook until softened, about 3 minutes.

2Add wine and vinegar and reduce over high heat, stirring, for about 1 minute.

3Reduce heat to medium-low, add tomatoes, and simmer for 5 to 6 minutes, or until most of the liquid is evaporated.

4Stir in shredded basil, season with salt and pepper, and simmer for 30 seconds.

5Keep warm while grilling tuna.

Cooking Fish

1When coals have burned down to medium-hot or when broiler is heated, place tuna steaks on grill or broiler tray 4 to 5 inches from fire and cook each side for about 4 minutes, or until tuna is medium-rare in center.

2Season with salt, if desired.

3Place tuna steaks on a large platter, spoon tomato-basil sauce over top and garnish each steak with a sprig of oregano and basil leaf.

4Serve immediately.

Serve with Lemon Rice.

2 tablespoons lemon juice

2 tablespoons fresh oregano (2 tsp. dried), chopped

1 1/2 tablespoons unsalted butter

1 1/2 olive oil

3 tablespoons shallot, finely chopped

2 tablespoons red wine

1 tablespoon sherry vinegar

1 pound plum tomatoes, peeled, seeded, dice

1 1/2 tablespoons fresh basil leaves, shredded

salt

freshly ground pepper
