Directions

1Mix cornstarch, sugar and salt. Add hot water gradually while stirring. Cook until thickened. Boil 5 minutes longer. Add butter, egg yolks and lemon juice. Cook 1 minute longer. Pour in pie shell and put meringue on while it is hot. Bake at 350 for 12-15 minutes.

4 1/2 tablespoons cornstarch

1 1/8 cups sugar

pinch of salt

1 1/2 tablespoons butter

3 egg yolks, slightly beaten

6 tablespoons lemon juice

grated lemon rind

1 1/2 cups boiling water
