Italian Style Chicken Cutlets

Directions

1Pound chicken breast to about 3/8 inch thick.

2In a rimmed plate stir together bread crumbs, flour, Parmesan cheese, herb seasoning, pepper, and coriander.

3In another rimmed plate beat egg until blended.

4Dip each chicken piece into egg to coat, then dredge in crumb mixture until coated.

5Brown chicken in olive oil until browned evenly.

6Place in a baking dish.

7Evenly top chicken with marinara sauce and heat for about 15 minutes (1 1/2 minutes on high in microwave). Evenly sprinkle with cheese and heat until melted.

8Serve over spaghetti or other pasta.

2 boned and skinned chicken breast halves

2 tablespoons fine dry breadcrumbs

2 tablespoons flour

2 tablespoons Parmesan cheese

1/2 teaspoon Italian seasoning

1/8 teaspoon pepper

1/8 teaspoon ground coriander

1 egg

olive oil

2 cups Marinara sauce

1/3 cup Mozzarella cheese, grated
