Green Salad with Gorgonzola and Hazelnuts

Directions

1Mix vinegar and salt in a small bowl.

2Blend in half of the cheese, mashing with fork.

3Whisk in oil, 1 drop at a time.

4Place spinach in salad bowl. Toss with dressing and hazelnuts.

5Arrange salad on plates. Sprinkle with remaining cheese.

Ingredients

1 tablespoon red wine vinegar

Salt to taste

1/4 pound Gorgonzola cheese

1/4 cup olive oil

1 1/2 pounds fresh spinach, stemmed & torn

1/4 cup hazelnuts, toasted & chopped
