Directions
1In a large bowl or resealable plastic bag, whisk together the first five ingredients. Add lamb chops; toss to coat. Cover and refrigerate at least 1 hour or up to 3 hours.
2Heat grill. Remove lamb from marinate and discard the marinate. Sprinkle lamb with salt and pepper. Brush grill with oil.
3Grill chops over medium heat. About 6 minutes a side for medium rare.
The trick is the grilling. Do not over cook.
Another option is not to cut the racks into chops before grilling.
