1Slowly melt 1/3 cup of sugar in frying pan. When melted pour into a one quart souffle dish.
2Stir remaining ingredients together and pour into the souffle dish.
3Set dish in a pan of hot water and bake for 40 minutes at 350 until center is just set.
4Chill until ready to serve. To unmold, run a knife around the edge of dish. Place plate lip side down on top of dish. Invert dish quickly, shaking gently until custard unmolds.
The most difficult part of this recipe is melting the sugar. It takes a long time to begin to melt. Once at that point, it moves very quickly and can burn or get hard. If this happens, start over! It may take one or two tries to get the hang of it.
