1Bake the potatoes until soft; split lengthwise and scoop the pulp into a mixing bowl, scraping shells well.
2Leave scooped out potato just as is, do not mash or chop. Add the very soft butter, salt, pepper, and cream. Mix lightly and transfer to a flat baking dish.
3Sprinkle with cheese. Bake in a 375 oven for 15 - 20 minutes.
