Dilled Shrimp

This makes a nice appetizer or a dish for a buffet.

Directions

1In a large skillet combine the beer, the dill sprigs, the parsley, the garlic, and the allspice and bring to a boil.

2Add the shrimp and cook, covered, over moderately high heat for 2 minutes, or until they are pink and just firm.

3Drain the shrimp, refresh them under cold water, and shell them.

4In a bowl toss the shrimp with the snipped dill, the lemon juice, the oil and the pepper.

5Serve the shrimp warm or at room temperature.

1 12 oz can beer

3 dill sprigs

10 parsley sprigs

1 garlic clove, crushed

pinch allspice

1 1/2 pounds shrimp

2 tablespoons fresh dill, snipped

2 tablespoons fresh lemon juice

1/4 cup olive oil

pepper, coarsely ground
