0 Full-screen Creme Wafers Cookies November 27, 2016 An elegant bite-size cookie. Prep: 3 hrs Cook: 45 mins Yields: 60 Cookies Directions Wafer 1Cream butter until fluffy. Sift flour, measure, then add alternately with cream to the butter. Chill. 2Roll out 1/3 of the dough at a time until 1/8 " thick. Cut into rounds using the center of a donut cutter. 3Cover with sugar on both sides. Place on an ungreased cookie sheet. Prick each round a few times with a fork. 4Bake at 375 for 7 minutes. Cool. Filling 1Cream butter and sugar together. Add egg yolk and vanilla. Beat until smooth and creamy. Assembly 1Put two wafers together with a thick layer of filling.These are tedious to make but are delicious and impressive to serve or give.
