An elegant bite-size cookie.

Directions

Wafer

1Cream butter until fluffy. Sift flour, measure, then add alternately with cream to the butter. Chill.

2Roll out 1/3 of the dough at a time until 1/8 " thick. Cut into rounds using the center of a donut cutter.

3Cover with sugar on both sides. Place on an ungreased cookie sheet. Prick each round a few times with a fork.

4Bake at 375 for 7 minutes. Cool.

Filling

1Cream butter and sugar together. Add egg yolk and vanilla. Beat until smooth and creamy.

Assembly

1Put two wafers together with a thick layer of filling.

These are tedious to make but are delicious and impressive to serve or give.

1 cup butter

2 cups flour

1/2 cup whipping cream

granulated sugar

Filling

4 tablespoons butter

2 cups powdered sugar, sifted

1 egg yolk

1 teaspoon vanilla
