Creamy Roquefort Dressing

Directions

1In a blender or food processor blend the egg yolk, the vinegar, the Roquefort, the garlic, and salt and pepper to taste until the mixture is combined well.

2With the motor running add the oil in a stream, and blend the dressing until it is emulsified.

1 large egg yolk

2 tablespoons white wine vinegar

1/3 cup Roquefort, crumbled

1/2 teaspoon garlic, minced

2/3 cup olive oil
