The icing for the coconut cupcakes.

  • Yields: 3 cups

Directions

1In the bowl of an electric miser blend together the cream cheese, butter, vanilla and almond extract.

2Add the sugar and mix until smooth.

Ingredients

1 lb cream cheese at room temperature

3/4 lb butter at room temperature

1 tsp vanilla

1/2 tsp almond extract

1 1/2 lbs confectioners' sugar, sifted
