Cold Peach Soup

A tangy soup that can be served as a starter or walk around soup at a luncheon or brunch.

  • Yields: 8 Servings

Directions

1Puree the peaches in a blender or food processor. Pour into a large bowl and add lemon juice and honey. Set aside.

2Mix remaining ingredients together in saucepan and bring to a boil. Reduce heat and simmer 5 minutes. Remove cloves and cool.

3When spiced wine is cool, add peach puree. Chill and serve.

Ingredients

3 cups fresh or unsweetened canned peaches

3 tablespoons lemon juice

1 1/2 tablespoons honey

3 cups white wine

2 cloves

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

pinch salt
