Chicken Taquitos

Directions

1In a large bowl, combine the first 6 ingredients; mix well. Set aside.

2In a small skillet, heat oil. Using tongs, dip tortillas in oil about 5 seconds on each side; drain on paper towels. Keep warm.

3Place 2 tablespoons of chicken mixture onto each tortilla; roll tortillas jellyroll fashion.

4Place seam side down on a cookie sheet sprayed with vegetable cooking spray.

5Bake at 400 degrees for 15 minutes or until desired crispness.

Ingredients

2 cups chicken meat, cooked and shredded

1 can mild enchilada sauce

1 cup 4 Mexican cheese mixture, shredded

1/2 cup onion, minced

1 can green chilis, diced

1 teaspoon garlic salt

3/4 cup vegetable oil

24 corn tortillas
