Carrot Basmati Rice Pilaf

Directions

1In a large saucepan, heat olive oil over medium heat. Add shallots and pine nuts. Cook 4 - 6 minutes. Add rice, carrots, orange zest, cardamon and crushed red pepper. Cook 2 minutes, stirring frequently. Add warm chicken broth. Cover pan tightly and simmer 12 -15 minutes, until liquid is absorbed.

1 tablespoon olive oil

1/4 cup shallots, finely chopped

2 tablespoons pine nuts

1 cup basmati rice, uncooked

3 carrots, grated

3 teaspoons orange zest, finely grated

1/4 teaspoon ground cardamom

2 1/4 cups chicken broth

1/8 teaspoon crushed red pepper
