1Soften blue cheese. In a small bowl, stir blue cheese to break up slightly. Gradually stir in cream. If mixture is too stiff add more cream as desired. Add pepper to taste.
2Serve with crackers and purchased onion jam.
Look for a soft, crumbly blue cheese with no rind, such as Point Reyes.
Can be made up to 2 days in ahead; covered and chilled. Bring to room temperature before serving.
