Banana Cupcakes

Directions

1Cream shortening, sugar and vanilla. Beat in eggs, one at a time. Sift dry ingredients. Add alternately with banana and buttermilk.

2Pour in lined cups.

3Bake at 375 about 20 minutes. Remove from tins and frost when cool.

Frosting

1Cream butter and sugar. Add vanilla and cream. Beat well.

1/2 cup margarine

1 cup sugar

1 teaspoon vanilla

2 eggs

2 1/4 cups cake flour

1/2 teaspoon salt

1/4 teaspoon soda

2 1/2 teaspoons baking powder

1 cup banana, mashed

1/4 cup buttermilk

Frosting

1/4 cup butter

2 cups sifted powdered sugar

1 teaspoon vanilla

2 tablespoons cream
