Directions

1In a small bowl combine all the dry ingredients

2In a large measuring cup, combine buttermilk, food coloring, vinegar and vanilla.

3Beat butter and sugar for one minute or so until light. Add eggs one at a time and beat until well combined.

4With the mixer running at low speed add the dry ingredients and the wet ingredients alternately in three parts until combined.

5Scoop batter into prepared muffing tins. Bake at 350 degrees for 25-30 minutes for regular size muffins or 20-22 for mini size. Check with toothpick . Cool completely in the pans/

6Frost with Red Velvet Frosting. See in notes

Frosting:

8 ounces of cream cheese. room temperature

12 tablespoons of butter,  room temperature

1/2 tsp vanilla

3 1/5 cups of powdered sugar

2 1/2 cups flour + 1/4 cup of cocoa powder

1 tsp baking powder

1 tsp baking soda

1 tsp kosher salt

1 cup buttermilk

1 tbsp red food coloring

1 tsp white vinegar

1 tsp vanilla

1/4 lb unsalted butter

1 1/2 cups sugar

2 extra large eggs
