Directions
1Filet chicken breasts and pound until thin and even.
2Saute onions and mushrooms. I'd add about 1 teaspoon of thyme.
3Place a piece of chicken breast in the bowl of a soup ladle creating "bowl". The chicken with overlap the sides of the ladle.
4Fill "bowl" with a generous scoop of mushroom mixture. Fold the trailing part of the chicken over the mixture forming a little packet. Place on a parchment covered cookie sheet. Repeat with remaining breasts and filling.
5Melt butter and spread on each breast. Sprinkle with parmesan cheese.
6Bake 35 minutes in a 350 degree oven.
