Lemon Bars

This is Coz and Mom's recipe. I double it and use a half sheet pan. The crust can be sticky so I cover with parchment and press into the sheet pan with a rolling pin or tall glass.

Directions

1For Crust blend 1 c butter, 2 c flour and 1/2 c powdered sugar. Press into 9 x 13 pan. Bake @ 350 for 15 minutes.

2While crust bakes Beat eggs add sugar, lemon juice and 1/4 c flour. Spread mixture over crust and bake another 25 minutes. Let cool, dust with powdered sugar and cut into squares.

1 Cup Butter

2 Cups Flour

1/3 Cup Powdered Sugar

4 Eggs

2 Cups Sugar

6-8 T Lemon Juice

1/4 Cup Flour
