White Bean and Tuna Salad

Directions

1In a large bowl whisk together the vinegar, mustard, salt and pepper.

2Add oil in a stream, whisking until it is emulsified.

3Add the beans, the scallions, the celery, 2 tablespoons of the parsley, the dill, and the tuna. Toss the mixture lightly.

4Season with salt and pepper.

5Chill, covered, for at least an hour.

6Arrange the lettuce on a platter, mound the salad on it and garnish with the onion and parsley.

Ingredients

2 tablespoons red wine vinegar

1 teaspoon dijon mustard

1/3 cup salad oil

2 scallions, thinly sliced

3 stalks celery, thinly sliced

1/4 cup parsley leaves, fresh, minced

2 tablespoons dill, fresh, snipped

1 7 oz. can tuna in water

5 cups romaine lettuce

1 red onion, sliced

2 cups white beans (canned or cooked)
