Sweet Potato Wedges

Directions

1In a 10 by 15 inch baking pan mix potatoes with 2 teaspoons of olive oil, 1/4 teaspoon of salt and 1/4 teaspoon of coarse-ground pepper.

2Bake in a 450 oven, stirring occasionally with a wide spatula, until potatoes are browned and tender when pierced, 20 to 25 minutes.

Ingredients

1 pound red garnet sweet potatoes, cut lengthwise, into wedges.
