Southwest Pork Tenderloin

Directions

1Combine all ingredients except pork.

2Set aside 1/4 cup of mixture for sauce.

3Pour remaining marinade and pork into a plastic bag and marinate, refrigerated, overnight.

4When ready to cook, preheat grill.

5Grill pork for 20 minutes or until barely pink in the center.

6 Let meat rest for 5 minutes after removing from the grill.

7Slice and serve with reserved marinade drizzled over the top.

Ingredients

1/2 cup fresh lime juice, `

6 tablespoons soy sauce

1/4 cup olive oil

2 tablespoons sugar

2 tablespoons fresh oregano, chopped

2 tablespoons fresh rosemary, chopped

1 tablespoon garlic, minced

1/2 cup cilantro, chopped

1/2 teaspoon cayenne pepper

1 1/2 teaspoons chili powder

2-1 pound pork tenderloins, trimmed
