Romaine with Watercress Dressing

Directions

Salad

1Wash and dry lettuce and watercress. Wash radishes and slice sliver thin.

2Remove the coarse stem from the watercress and chop like you would parsley.

3Chill lettuce and radishes.

Dressing

1In a small bowl mix the oil, lemon juice, vinegar, 1/2 teaspoon of salt, mustard and sugar.

2Add the chopped watercress and stir well. Chlll

3Before serving tear the lettuce leaves. Sprinkle with remaining salt; add the drained sliced radishes and toss with the dressing.

2 heads romaine lettuce

1 bunch small radish

Dressing

9 tablespoons olive oil

juice of one lemon

1 tablespoon tarragon vinegar

1 teaspoon salt

1/8 teaspoon dry mustard

1/8 teaspoon sugar

1 bunch watercress
